Chili

I love Chili when it’s cold outside and baby is it cold outside. Try my go to chili recipe. No frill, just good, fill me up kind of chili. Good for any cold night at home or a football tailgate.

2 lb ground beef

½ large onion, diced (about 1 cup)

3-4 garlic cloves, minced

1 serrano pepper, minced

1 (15 oz) can diced tomatoes

2 (15 oz) cans tomato sauce

1 (16 oz) can dark red kidney beans

1 qt beef stock

1 (6 oz) can tomato paste

1 T beef base

¼ cup chili powder- more depending on your taste

salt and pepper to taste

-Start to cooking the ground beef in stock pot- I use 90/10 ground beef so I don’t have to drain a bunch of fat

– When ground beef is almost done, add onions, peppers and garlic.

-Add tomatoes, beans, stock and seasoning, bring to a boil and reduce heat to simmer.

-Simmer on low for 45 minutes to 1 hour to help develop flavors

– Serve with your favorite toppings
