Roasted Tomato and Goat Cheese Spread

I love roasted tomatoes with garlic, balsamic and olive oil. I also love goat cheese so why not pair the two? I like making this spread and serve it with crostini. You can also roast the tomatoes and put them over a nice grilled steak with some crumbled goat cheese. The tomatoes and cheese are such a good compliment to the meat.

10.5 ounces chevre

4-8 ounces cream cheese- depending on how much you like goat cheese. 🙂

2 pints grape or cherry tomatoes

2-3 garlic cloves, minced

1/3 cup balsamic vinegar

1/4 cup olive oil- enough to coat the tomatoes

salt and pepper to taste

-Preheat oven to 350 degrees

-Mix the goat cheese and cream cheese and set aside

-Toss the tomatoes with garlic, balsamic and olive oil. Season with salt and pepper.

-Roast tomatoes for about 15 minutes. Set aside and cool.

-Top cheese mixture with cooled tomatoes. Serve with crostini or table water crackers.
